Ingredients

  • 1 lb Ground pork
  • 1 tbsp Olive oil
  • 2 tbsp Taco seasoning
  • 4 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Corn kernels (cooked or canned, drained)
  • 1 cup Shredded cheddar cheese
  • 1 cup Tortilla chips
  • 1 whole Avocado
  • 0.5 cup Sour cream
  • 1 tbsp Lime juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Cilantro (optional, chopped)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Add the ground pork and cook, breaking it up with a spatula, until browned and fully cooked, about 7-8 minutes.

Stir in the taco seasoning and a splash of water. Cook for an additional 2-3 minutes, then remove from heat and set aside.

While the pork is cooking, wash and chop the romaine lettuce and halve the cherry tomatoes.

If using fresh corn, cook it according to your preference. If using canned corn, drain it completely.
