Ingredients

  • 1 pound boneless pork shoulder
  • 2 medium sweet potatoes
  • 1 medium yellow onion

  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 4 cups low-sodium chicken broth
  • 1 14.5-ounce can canned diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 0.5 teaspoon ground cinnamon
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 0.25 teaspoon optional crushed red pepper flakes

Directions

Step 1

Cut the pork shoulder into 1-inch cubes and season with salt and pepper.

Step 2

Peel and dice the sweet potatoes into 1-inch cubes. Peel and chop the onion and carrots into small pieces. Mince the garlic cloves.

Step 3

In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the pork cubes in batches until browned on all sides, about 2-3 minutes per side. Remove the pork and set it aside.

Step 4

In the same pot, add the chopped onion and carrots. Sauté for 5 minutes, stirring occasionally, until they begin to soften.
