Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp All-purpose flour
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 8 oz Cremini or button mushrooms, sliced
  • 1 tsp Paprika
  • 1 cup Beef or chicken broth
  • 1 cup Sour cream
  • 1 tbsp Dijon mustard
  • 2 tbsp Fresh parsley, chopped
  • 0 Cooked egg noodles or rice, for serving

Directions

Step 1

Slice the pork tenderloin into thin strips, about 1/4 inch thick. Lightly season the pork strips with salt and pepper.

Step 2

Dredge the pork in flour, shaking off any excess.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add half the pork strips and cook for 2-3 minutes per side, until golden brown. Remove to a plate and repeat with the remaining pork, adding another tablespoon of olive oil and butter if needed.

Step 4

Reduce heat to medium and add the chopped onion to the same skillet. Sauté for 3-4 minutes until softened.

Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms have released their moisture and are golden brown.

Return the pork strips to the skillet along with any accumulated juices. Simmer for 5-7 minutes, or until the pork is cooked through and tender.

Taste and adjust seasoning with additional salt and pepper if needed.
