1. In a small bowl, combine 2 tablespoons of soy sauce, 1 teaspoon of cornflour (if using), and 0.5 teaspoon of pepper. Add the thinly sliced pork loin and mix well to coat. Let it marinate for 10 minutes while preparing the other ingredients.
2. Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until just cooked through. Remove the pork from the wok and set aside.
3. In the same wok, heat the remaining 1 tablespoon of vegetable oil. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
4. Add the broccoli florets, julienned carrot, and sliced red bell pepper. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
5. Run hot water over the Hokkien noodles to loosen them, then drain well. Add the noodles to the wok along with the cooked pork.
6. Mix together the remaining 1 tablespoon of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of hoisin sauce, and 1 teaspoon of sesame oil in a small bowl. Pour this sauce mixture over the noodles and toss everything together to coat evenly.
7. Add the bean sprouts and sliced spring onions to the wok. Stir-fry for an additional 1-2 minutes to heat through and combine flavors.
8. Serve immediately, garnished with additional spring onions if desired.
