Ingredients

  • 1 pound Pork tenderloin
  • 2 tablespoons Soy sauce
  • 1 tablespoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 1 Red bell pepper
  • 2 cups Broccoli florets
  • 1 Carrot
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Apricot preserves
  • 1 tablespoon Rice vinegar
  • 1 cup Chicken broth
  • 1 teaspoon Sesame oil
  • 2 Green onions
  • 1 tablespoon Sesame seeds

Directions

Step 1

Slice the pork tenderloin into thin strips and place in a bowl. Add 1 tablespoon of soy sauce and the cornstarch. Toss to coat and let marinate for 10 minutes.

Step 2

Thinly slice the red bell pepper, peel and julienne the carrot, mince the garlic, and grate the ginger. Set aside.

Step 3

In a small bowl, whisk together the apricot preserves, remaining 1 tablespoon of soy sauce, rice vinegar, and chicken broth. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and cook until browned and just cooked through, about 3-4 minutes. Remove and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir fry the broccoli, red bell pepper, and carrot for 3-5 minutes until tender but still crisp.
