  • 3 medium potatoes, peeled and cubed
  • 1 red bell pepper, seeded and sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Season the pork cubes with salt and black pepper, then brown them in batches, ensuring all sides are seared. Remove the pork and set aside.
