  • 1 large onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 medium parsnip, peeled and sliced
  • 2 medium celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 cups apple cider
  • 1 cup chicken stock
  • 5 sprigs fresh thyme
  • 2 bay leaves
  • 4 medium red potatoes, quartered
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp chopped parsley (optional, for garnish)

Directions

Step 1

Cut the pork shoulder into 1- to 1.5-inch cubes. Season the cubes with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat. Add olive oil and sear the seasoned pork cubes in batches until they are browned on all sides. Transfer the browned pork to the slow cooker.

Step 3

In the same skillet, add the diced onion, carrots, parsnips, and celery. Sauté for 5-7 minutes until the vegetables are slightly softened. Add the minced garlic and cook for 1 more minute.

Transfer the sautéed vegetables to the slow cooker on top of the pork.
