Ingredients

  • 4 pieces pork steaks
  • 500 grams baby potatoes
  • 300 grams green beans
  • 4 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 pieces garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Wash the baby potatoes and halve them. Toss them in a mixing bowl with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and the paprika. Spread them evenly on a baking tray lined with parchment paper.

Step 3

Place the potatoes in the oven and roast for 30-35 minutes, turning halfway through cooking for even browning.

Step 4

While the potatoes are roasting, season the pork steaks with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and the dried thyme on both sides.

Heat a large skillet over medium-high heat and add the remaining 2 tablespoons of olive oil. Once hot, add the pork steaks and sear for 3-4 minutes per side until golden brown and cooked through. Remove the steaks from the skillet and let them rest on a plate, loosely covered with foil.

Trim the ends of the green beans. In a second skillet, bring some salted water to a boil. Add the green beans and blanch them for 3-4 minutes until tender but still crisp. Drain the beans and toss them with a squeeze of lemon juice and a pinch of salt.
