Ingredients

  • 450 grams Pork tenderloin
  • 1 whole Lemon
  • 0.5 teaspoons Saffron threads
  • 2 cloves Garlic
  • 2 teaspoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 pieces Wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Cut the pork tenderloin into 2.5 cm (1-inch) cubes and set aside.

Step 3

In a small bowl, combine the saffron threads with 1 tablespoon of warm water. Let it bloom for 5 minutes.

Step 4

Zest and juice the lemon. In a mixing bowl, combine the lemon zest, lemon juice, saffron water, minced garlic, olive oil, ground cumin, dried oregano, salt, and black pepper.

Step 5

Add the pork cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and let the pork marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Step 6

Preheat your grill or grill pan over medium-high heat.

Step 7

Thread the marinated pork cubes onto the soaked skewers, dividing the meat evenly between all skewers.

Step 8

Grill the skewers for 8-10 minutes, turning occasionally, until the pork is cooked through and lightly charred on the edges. The internal temperature of the pork should reach 63°C (145°F).

Step 9

Remove the skewers from the grill and let them rest for 5 minutes. Serve warm with a side of your choice, such as a simple salad or grilled vegetables.
