Ingredients

  • 2 pounds pork belly
  • 8 cups water
  • 3 tablespoons tamarind paste or fresh tamarind
  • 2 medium tomatoes
  • 1 large onion
  • 1 medium radish
  • 1 medium eggplant
  • 1 cup string beans
  • 1 bunch water spinach (kangkong)
  • 3 tablespoons fish sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Prepare all the ingredients: cut the pork belly into 1-inch cubes, quarter the tomatoes, slice the onion, and cut the radish, eggplant, and string beans into bite-sized pieces.

In a large pot, bring 8 cups of water to a boil.

Add the pork belly and let it simmer for about 15 minutes, skimming off any foam that rises to the surface.

Stir in the tamarind paste or fresh tamarind, tomatoes, and onion. Cover the pot and let it simmer for 30 minutes or until the pork is tender.

Add the radish and let it cook for 5 minutes, then add the eggplant and string beans. Continue to simmer for another 10 minutes.

Season the soup with fish sauce, salt, and black pepper. Taste and adjust the seasoning as necessary.
