Ingredients

  • 500 g Pork shoulder (ground)
  • 150 g Pork fat or lard
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 500 ml Milk
  • 250 ml Water
  • 0.5 tsp Ground cloves
  • 0.5 tsp Ground cinnamon
  • 1 tsp Dry mustard powder
  • 1.5 tsp Salt
  • 1 tsp Black pepper (freshly ground)
  • 1 cup Breadcrumbs

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, add the ground pork shoulder and pork fat. Cook over medium heat, stirring frequently to break up the meat, until the fat starts to render and the meat begins to brown lightly.

Step 2

Add the chopped onion and minced garlic to the pot. Sauté until the onions are translucent and fragrant, about 5 minutes.

Step 3

Pour in the milk and water, and stir to combine. Bring the mixture to a gentle simmer over medium heat.

Step 4

Reduce the heat to low and add the ground cloves, ground cinnamon, mustard powder, salt, and black pepper. Stir well to evenly distribute the spices throughout the mixture.

Step 5

Cover the pot with a lid, leaving it slightly ajar to allow steam to escape. Cook the mixture on low heat for 90 minutes, stirring occasionally to prevent sticking. The mixture should thicken as it cooks.

Step 6

After 90 minutes, remove the lid and stir in the breadcrumbs. Continue to cook for another 15-20 minutes, stirring frequently, until the mixture becomes thick and spreadable.

Step 7

Remove the pot from heat and allow the cretons to cool slightly. Transfer the mixture to ramekins, small bowls, or airtight containers. Press down gently with a spoon to remove any air pockets.

Step 8

Cover the containers and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the spread to firm up.

Step 9

Serve the cretons cold or at room temperature with crusty bread, toast, or crackers. Enjoy this traditional Québécois comfort food!
