Ingredients

  • 4 pieces (about 4 oz each) Boneless pork loin chops
  • 2 tablespoons All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.5 cup Low-sodium chicken broth
  • 0.25 cup Dry white wine
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon (drained) Capers
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Place the pork chops between two sheets of plastic wrap and pound them to about 1/4-inch thickness using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the flour, salt, and pepper. Dredge each piece of pork in the flour mixture, shaking off any excess.

Step 3

In a large nonstick skillet, heat the olive oil over medium-high heat. Add the pork and cook for 2-3 minutes per side, or until golden brown and cooked through. Transfer the pork to a plate and keep warm.

Step 4

In the same skillet, add the chicken broth, white wine, lemon juice, and capers. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.

Step 5

Cook the sauce for 3-4 minutes, or until slightly reduced and flavorful.

Step 6

Return the pork to the skillet and cook for an additional 1-2 minutes, spooning the sauce over the meat to coat.

Step 7

Sprinkle with fresh parsley before serving. Serve immediately with your choice of a light side dish, such as steamed vegetables or a small serving of whole-grain pasta.
