  • 4 pieces Pork cutlets
  • 0.5 cup All-purpose flour

  • 2 cups Cherry tomatoes
  • 0.5 cup Green olives (pitted and sliced)
  • 0.75 cup Dry white wine
  • 0.5 cup Chicken stock
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Capers (optional)

Directions

Step 1

Lay each pork cutlet between two sheets of plastic wrap or parchment paper and pound to an even thickness of about 1/4 inch using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each pork cutlet in the flour mixture, shaking off any excess.
