  • 6 pieces pork sausages
  • 200 grams brown or green lentils
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, finely diced
  • 1 stalk celery stalk, finely diced
  • 2 cloves garlic cloves, minced
  • 500 milliliters chicken or vegetable stock
  • 400 grams canned diced tomatoes
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 125 milliliters white wine (optional)
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 tablespoon parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the lentils thoroughly under running water and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or pan over medium heat. Add the pork sausages and cook until browned all over, about 7-8 minutes. Remove the sausages from the pan and set aside.

Step 3

In the same pan, add the remaining tablespoon of olive oil. Sauté the onion, carrot, and celery for 5 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for an additional minute until fragrant.
