Preheat your oven to 200°C (390°F).
In a mixing bowl, whisk together the plain flour, eggs, and milk until you achieve a smooth batter. Set aside to rest for 15 minutes.
Heat a frying pan over medium heat. Add the olive oil, and sauté the finely chopped onion and minced garlic until soft and lightly golden, about 5 minutes.
Add the pork sausages to the pan, cooking them until browned on the outside, about 5-7 minutes. Remove and slice the sausages into bite-sized pieces.
Place a 20cm (8-inch) baking dish or ovenproof skillet into the preheated oven to heat for 5 minutes.
Carefully remove the hot dish from the oven and add the butter, swirling to coat the base as it melts.
Quickly pour the rested batter into the hot dish, then scatter the sausage pieces, sautéed onion, garlic, and thyme leaves evenly over the top.
Season with salt and black pepper.
