Ingredients

  • 12 leaves Iceberg or butter lettuce
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Fresh ginger, grated
  • 1 small Red chili, finely chopped (optional)
  • 500 grams Ground pork
  • 1 medium Brown onion, finely diced
  • 1 medium Carrot, finely diced or grated
  • 1 cup Water chestnuts, chopped
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Spring onions, finely sliced
  • 1 tablespoon Sesame seeds, for garnish
  • 2 tablespoons Coriander leaves, for garnish
  • 4 pieces Lime wedges, for serving

Directions

Step 1

1. Separate and rinse the lettuce leaves under cold water. Pat them dry with paper towels and set aside in the refrigerator to keep them crisp.

Step 2

2. Heat the vegetable oil in a large frying pan or wok over medium-high heat.

Step 3

3. Add the minced garlic, grated ginger, and chopped red chili (if using). Sauté for about 30 seconds until fragrant.

Step 4

4. Add the ground pork to the pan, breaking it up with a wooden spoon. Cook for 5-7 minutes until the pork is browned and fully cooked.

Step 5

5. Stir in the diced onion and carrot. Cook for another 3-4 minutes until the vegetables are soft.

Step 6

6. Add the chopped water chestnuts to the pan, stirring well to combine.

Step 7

7. In a small bowl, mix the soy sauce, hoisin sauce, oyster sauce, and sesame oil. Pour the sauce mixture into the pan and stir to evenly coat the pork and vegetables. Cook for 2 more minutes, allowing the flavors to meld together.

Step 8

8. Remove the pan from the heat and stir in the sliced spring onions.

Step 9

9. To serve, spoon 2-3 tablespoons of the pork mixture into each lettuce leaf. Garnish with sesame seeds and coriander leaves.

Step 10

10. Serve immediately with lime wedges on the side for added flavor.
