  • 3 pounds pork loin roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 3 medium apples, cored and sliced
  • 1 cup apple cider
  • 1 cup chicken broth
  • 4 sprigs fresh thyme

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin roast dry with paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, and ground cinnamon. Rub this seasoning mixture all over the pork roast.

Step 3

Heat the olive oil in a large ovenproof skillet or Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Remove the pork from the skillet and set aside.

In the same skillet, add the sliced onion and cook for 2-3 minutes until softened. Add the apple slices and cook for another 3 minutes until they start to caramelize.
