Ingredients

  • 3 lbs pork shoulder roast
  • 4 medium sweet potatoes
  • 1 large yellow onion
  • 4 whole garlic cloves
  • 2 tbsp olive oil
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp ground thyme
  • 1 cup chicken broth
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar

Directions

Step 1

Peel and chop the sweet potatoes into 1-inch cubes and place them at the bottom of the crock pot.

Step 2

Slice the onion into thin wedges and add it on top of the sweet potatoes.

Step 3

Peel and smash the garlic cloves, then scatter them over the sweet potatoes and onions.

Step 4

In a small bowl, mix together the kosher salt, black pepper, paprika, and ground thyme.

Step 5

Rub the pork shoulder roast with olive oil on all sides, then coat it evenly with the prepared spice mixture.

Step 6

Place the seasoned pork roast on top of the sweet potatoes and onions in the crock pot.
