  • 1 lb Boneless pork loin or shoulder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Garlic powder
  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 1 large Carrot, diced
  • 1 medium Bell pepper, diced
  • 1 cup Raw long-grain white rice
  • 2 cups Chicken or vegetable broth
  • 2 tbsp Soy sauce
  • 0.5 tsp Dried thyme
  • 1 cup Cheddar cheese, shredded
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Dice the pork into bite-sized cubes and season with salt, black pepper, and garlic powder.

Step 3

Heat olive oil in a large skillet over medium heat. Add the pork and brown on all sides, about 5-7 minutes. Remove from the pan and set aside.

In the same skillet, add the diced onion, carrot, and bell pepper. Sauté for 5-7 minutes until softened.
