Ingredients

  • 1 kg pork ribs
  • 5 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tsp sugar
  • 1 tbsp cornstarch
  • 1.5 cups water
  • 1 thumb-sized piece ginger
  • 4 pieces garlic cloves
  • 2 tbsp cooking oil
  • 2 stalks spring onions
  • 1 tsp sesame oil

Directions

Step 1

Cut the pork ribs into bite-sized pieces if not already cut, and pat them dry with a paper towel.

Step 2

In a small bowl, mix 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, dark soy sauce, and sugar. Set aside.

Step 3

Peel and thinly slice the ginger. Crush and mince the garlic cloves.

Step 4

In a large pot or deep skillet, heat the cooking oil over medium-high heat. Add the ginger and garlic and sauté until fragrant, about 1-2 minutes.

Step 5

Add the pork ribs to the pot and sear them on all sides until lightly browned, about 3-4 minutes.

Step 6

Pour the sauce mixture over the ribs and stir to coat evenly.

Step 7

Add water to the pot and bring the mixture to a boil. Lower the heat to a simmer, cover the pot, and cook for 45 minutes, stirring occasionally.

Step 8

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.

Step 9

After 45 minutes, uncover the pot and stir in the cornstarch slurry to thicken the sauce. Allow it to simmer for another 5 minutes until the sauce reaches your desired consistency.

Step 10

Stir in the remaining 3 tablespoons of oyster sauce and 1 tablespoon of soy sauce. Add sesame oil for an extra layer of flavor.

Step 11

Garnish with chopped spring onions before serving. Serve hot with steamed rice or noodles.
