Ingredients

  • 4 lbs pork rib roast (bone-in)
  • 2 tbsp salt
  • 2 tsp black pepper
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 2 tsp fresh rosemary
  • 2 tsp fresh thyme
  • 3 cloves garlic (minced)
  • 1 cup apple cider
  • 1.5 cups chicken or pork stock
  • 2 tbsp all-purpose flour
  • 1 apple (peeled and diced)
  • 0.5 cup white wine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork rib roast dry using paper towels. Season generously all over with salt and black pepper.

Step 3

Heat olive oil in a large skillet over medium-high heat. Sear the pork rib roast on all sides until golden brown, about 3-4 minutes per side. Transfer to a roasting pan, fat layer facing up.

Step 4

In a small bowl, combine 4 tablespoons of the butter with fresh rosemary, fresh thyme, and minced garlic. Spread the herb butter mixture evenly over the top of the pork rib roast.

Step 5

Roast the pork in the preheated oven for about 75-90 minutes, or until the internal temperature reaches 145°F (63°C) in the thickest part of the meat. Baste with pan drippings every 20 minutes for extra moisture and flavor.

Step 6

While the pork is roasting, prepare the apple and herb butter gravy. In the same skillet used to sear the pork, melt the remaining 2 tablespoons of butter over medium heat. Add the diced apple and sauté until soft, about 3-4 minutes.

Step 7

Sprinkle the flour over the apples and stir well to combine. Cook for 1 minute to remove any raw flour taste.

Step 8

Gradually add the apple cider, white wine, and chicken (or pork) stock, whisking constantly to prevent lumps. Simmer for 5-7 minutes, or until the gravy thickens. Season with a pinch of salt and pepper, if needed.

Step 9

Once the pork is done roasting, remove it from the oven and cover loosely with foil. Let it rest for 15 minutes before carving.

Step 10

Slice the pork rib roast and serve with the warm apple and herb butter gravy drizzled on top.
