  • 1 14-ounce can diced tomatoes, canned
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Cut the pork shoulder into 1-inch cubes and season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the pork in batches, browning all sides (about 3-4 minutes per batch), and remove it to a plate.
