  • 4 pieces Pork loin cutlets
  • 0.5 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 0.5 cup White wine
  • 0.5 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 2 tablespoons Capers (rinsed and drained)
  • 2 tablespoons Fresh parsley (chopped)
  • 4 slices Lemon slices (optional for garnish)

Directions

Step 1

Place the pork loin cutlets between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/4 inch using a meat mallet or rolling pin.

Step 2

In a shallow dish, mix the flour, salt, and black pepper. Lightly dredge each pork cutlet in the flour mixture, shaking off any excess.

Step 3

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter is melted and bubbling, add the cutlets to the skillet in a single layer. Cook for about 2-3 minutes per side until golden brown and cooked through. Remove the cutlets from the skillet and keep warm on a plate.
