  • 3 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 medium red bell pepper (sliced into thin strips)
  • 1 large carrot (julienned)
  • 1 medium zucchini (julienned)
  • 50 grams roasted peanuts (roughly chopped)
  • 1 teaspoon sesame oil
  • 2 tablespoons hoisin sauce
  • 0.5 teaspoon chili paste or chili flakes (optional, for heat)
  • 2 stalks spring onions (sliced, for garnish)
  • 2 pieces lime wedges (for serving)

Directions

Step 1

In a medium bowl, combine the sliced pork with 1 tablespoon of soy sauce and the cornstarch. Mix well to coat evenly and set aside to marinate for 10-15 minutes.

Step 2

Cook the egg noodles according to the package instructions. Drain and set aside.

Step 3

Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the marinated pork and stir-fry until fully cooked and browned, about 5-6 minutes. Remove the pork from the wok and set aside.
