Ingredients

  • 1 lb pork shoulder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 large onion
  • 2 medium carrots
  • 2 medium celery stalks
  • 3 cloves garlic cloves
  • 1 inch piece ginger
  • 8 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 8 oz dried egg noodles
  • 3 stalks scallions
  • 0.5 cup cilantro
  • 1 lime

Directions

Step 1

Season the pork shoulder with salt and black pepper. Cut into large chunks.

Step 2

In a large pot, heat vegetable oil over medium-high heat and add the pork. Sear on all sides until browned, about 5-7 minutes.

Remove the pork from the pot and set aside. Lower the heat to medium.

Step 4

Chop the onion, carrots, and celery into large pieces and add to the pot. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
