  • 1 half cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Fresh chives, finely chopped

Directions

Step 1

Trim the pork tenderloin of silver skin and any excess fat. Slice into 1-inch thick medallions and season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter, allowing the butter to melt and start to foam.

Place the pork medallions in the skillet in a single layer without crowding. Sear for 2-3 minutes per side until golden brown and cooked through (internal temperature of 145°F). Remove the medallions from the skillet and set aside on a plate, tenting with foil to keep warm.
