Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup All-purpose flour
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 2 Shallots, finely minced
  • 1 cup Chicken broth
  • 2 tbsp Dijon mustard
  • 2 tbsp Capers, drained
  • 0.25 cup Heavy cream
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Trim the pork tenderloin of any excess fat and silver skin. Slice it into 1-inch thick medallions and gently flatten each piece with the palm of your hand.

Step 2

Season the pork medallions with salt and black pepper on both sides.

Step 3

Dredge each piece lightly in flour, shaking off the excess.

Step 4

Heat a large skillet over medium-high heat and add the olive oil.

Step 5

Once the oil is shimmering, add the pork medallions in a single layer, working in batches if needed to avoid overcrowding. Sear for about 3-4 minutes per side until golden brown and just cooked through. Remove from the skillet and set aside.

Step 6

In the same skillet, reduce the heat to medium and melt the butter.

Step 7

Add the minced shallots and sauté for 2-3 minutes until softened and fragrant.

Step 8

Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Simmer for 3-4 minutes to reduce slightly.

Step 9

Stir in the Dijon mustard and capers, mixing well to combine.

Step 10

Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer gently for 2-3 minutes until thickened and silky.

Step 11

Return the pork medallions to the skillet, spooning the sauce over them to coat. Heat through for 1-2 minutes.

Step 12

Transfer the pork medallions to serving plates and garnish with freshly chopped parsley, if desired. Serve immediately.
