  • 2 tablespoons Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Whole-grain mustard
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Trim any excess fat or silver skin from the pork tenderloin. Slice into 1-inch thick medallions.

Step 2

Season the pork medallions on both sides with salt and pepper.

Lightly coat each medallion with flour, shaking off the excess.

Heat a large skillet over medium-high heat. Add the olive oil and butter, allowing the butter to melt and foam slightly.
