  • 0.5 cup Chicken broth
  • 3 tbsp Lemon juice, freshly squeezed
  • 2 tbsp Capers, drained
  • 1 tbsp Fresh parsley, chopped

Directions

Step 1

Slice the pork tenderloin into medallions about 1 inch thick. Lightly flatten each piece with the palm of your hand to ensure even cooking.

Season both sides of the medallions with salt and black pepper.
