Directions

Step 1

Slice the pork tenderloin into 1-inch-thick medallions. Season both sides with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the pork medallions and sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside on a plate.
