Ingredients

  • 1 lb pork tenderloin
  • 1 tsp salt

  • 2 tbsp brown sugar
  • 0.25 tsp ground cinnamon
  • 0.25 tsp ground ginger

Directions

Step 1

Trim any silver skin from the pork tenderloin and slice it into 1-inch thick medallions. Lightly pound with a meat mallet to even out their thickness.

Season the pork medallions on both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork medallions and cook for 2-3 minutes per side, or until they are golden brown and cooked through (internal temperature should read 145°F). Remove the medallions and set them aside to rest.
