Ingredients

  • 1 piece (approximately 1 pound) Pork tenderloin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots (finely chopped)
  • 1 clove Garlic (minced)
  • 1 medium Apple (peeled, cored, and diced)
  • 0.5 cup Chicken stock
  • 1 tablespoon Apple cider vinegar
  • 1.5 tablespoons Dijon mustard
  • 0.25 cup Heavy cream
  • 1 teaspoon Fresh thyme (optional, for garnish)

Directions

Step 1

Trim the pork tenderloin of any silver skin and cut it into 1-inch-thick medallions.

Step 2

Season the pork medallions on both sides with salt and pepper.

Step 3

In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork medallions and sear for 2-3 minutes on each side until golden brown. Remove and set aside on a plate.

Step 4

Reduce the heat to medium and add the butter to the skillet. Once melted, add the shallots and garlic. Sauté for 1-2 minutes until softened and fragrant.

Step 5

Stir in the diced apple and cook for 3-4 minutes, stirring occasionally, until the apple is slightly softened.

Step 6

Deglaze the skillet by adding the chicken stock and apple cider vinegar. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the mixture simmer for 2-3 minutes.

Step 7

Stir in the Dijon mustard and heavy cream. Let the sauce simmer gently for 2-3 minutes until it thickens slightly.

Step 8

Return the pork medallions to the skillet and spoon the apple mustard sauce over them. Simmer for 3-4 minutes to heat the pork through and ensure it's cooked to 145°F internally.

Step 9

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve the pork medallions with generous spoonfuls of the apple mustard sauce on top. Garnish with fresh thyme if desired.
