Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp cornstarch
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 cup Mandarin oranges (canned, drained)
  • 0.5 cup orange juice
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tsp fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 2 green onions (sliced)
  • 1 tsp sesame seeds (optional)

Directions

Step 1

Cut the pork tenderloin into bite-sized pieces and season with salt and black pepper.

Step 2

Coat the pork pieces with cornstarch, ensuring they are evenly covered.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the pork to the skillet and sauté until golden brown on all sides and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

Step 5

In the same skillet, lower the heat to medium and add the garlic and ginger. Sauté for 30 seconds until fragrant.

Step 6

Stir in the orange juice, soy sauce, rice vinegar, and brown sugar. Let the mixture simmer for 2-3 minutes, stirring occasionally.

Step 7

Add the drained Mandarin oranges to the skillet and gently stir to combine.

Step 8

Return the cooked pork to the skillet and toss to coat the pieces in the sauce. Let it simmer for another 3-4 minutes to allow the flavors to meld.

Step 9

Garnish with sliced green onions and sesame seeds, if desired.

Step 10

Serve immediately over steamed rice or with your preferred side dish.
