  • 1 tsp Black pepper

  • 2 tbsp Unsalted butter
  • 2 small Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Madeira wine
  • 0.75 cup Low-sodium chicken broth
  • 0.25 cup Heavy cream
  • 1 tsp Fresh thyme leaves
  • 1 tbsp Fresh parsley, chopped

Directions

Step 1

Trim any silver skin from the pork tenderloin and cut it into 1-inch thick medallions.

Step 2

Season the pork medallions with salt and black pepper on both sides.

Step 3

Dredge the medallions lightly in flour, shaking off any excess.

Step 4

Heat the olive oil in a large skillet over medium-high heat. Add the pork medallions in a single layer and sear for 2-3 minutes per side, until golden brown. Remove from the skillet and set aside.
