  • 2 pounds Pork loin
  • 6 tablespoons Olive oil
  • 8 whole Garlic cloves
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Fresh rosemary
  • 3 tablespoons White wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the pork loin dry with paper towels and season it generously with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of finely chopped fresh rosemary.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the pork loin on all sides until it develops a golden-brown crust, about 2-3 minutes per side.

Step 4

Transfer the skillet with the seared pork loin to the oven and roast for 35-40 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let the pork rest for 10 minutes.
