Ingredients

  • 2 pounds Pork loin
  • 8 ounces Fresh mozzarella cheese
  • 12 leaves Fresh basil leaves
  • 2 medium Tomatoes
  • 3 cloves Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Balsamic vinegar
  • 3 pieces Kitchen string

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tomatoes into thin rounds and set aside.

Step 3

Mince the garlic cloves and set them aside.

Step 4

Butterfly the pork loin by slicing it horizontally almost all the way through but leaving one side intact. Open it like a book and lay it flat on a cutting board.

Step 5

Season the inside of the pork loin with half of the salt and black pepper.

Step 6

Layer the fresh basil leaves evenly across one side of the pork loin.

Step 7

Add an even layer of tomato slices over the basil.

Step 8

Cut the fresh mozzarella into thin slices and layer it over the tomatoes.

Carefully roll up the pork loin tightly, starting from one edge, and secure it with kitchen string in three to four places.

Season the outside of the pork loin with the remaining salt, black pepper, and half of the minced garlic.

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.

Roast the pork loin for 40-50 minutes, or until it reaches an internal temperature of 145°F (63°C).

Once cooked, remove the pork loin from the oven and let it rest for 10 minutes before slicing.
