  • 2 pounds pork loin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 3 large yellow onions
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 cup chicken broth
  • 2 sprigs fresh thyme

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin dry with paper towels and season it evenly with salt, black pepper, and garlic powder on all sides.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Step 4

Sear the pork loin on all sides until golden brown, about 8-10 minutes total. Once seared, remove it from the skillet and set aside on a plate.

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil along with the butter to the skillet.

Peel and thinly slice the onions. Add them to the skillet and cook, stirring frequently, for about 10 minutes until softened.
