  • 4 pieces Pork loin chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium (diced) Yellow onion
  • 2 minced Garlic cloves
  • 2 medium (sliced) Bell peppers (red and yellow)
  • 8 ounces (sliced) Cremini mushrooms
  • 14 ounces (1 can) Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Dry white wine
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 2 tablespoons Capers
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Season the pork loin chops with salt and black pepper on both sides.

Step 2

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown. Remove them from the skillet and set aside.
