Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1.5 cups Chicken or vegetable broth
  • 0.75 cup Sour cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt, ground black pepper, and paprika, then lightly dust them with all-purpose flour.

Step 2

In a large skillet, heat the butter and olive oil over medium heat. Once the butter is melted and bubbly, add the pork chops. Cook for 4-5 minutes on each side or until golden brown. Remove the pork from the skillet and set aside.

Step 3

In the same skillet, add the finely chopped onion. Sauté for 3-4 minutes until softened and translucent.

Step 4

Add the minced garlic and cook for another 30 seconds, stirring constantly to prevent burning.

Step 5

Pour in the chicken or vegetable broth, scraping the bottom of the pan with a wooden spoon to deglaze and release any browned bits. Bring the mixture to a simmer.

Step 6

Reduce the heat to low and stir in the sour cream and Dijon mustard until well combined.

Step 7

Return the browned pork chops to the skillet, nestling them into the sour cream gravy. Cover the skillet with a lid and let the pork simmer gently for 20-25 minutes, or until the pork is tender and cooked through.

Step 8

Adjust seasoning to taste with additional salt and pepper, if needed.

Step 9

Garnish with chopped parsley and serve hot over mashed potatoes, rice, or buttered noodles.
