  • 2 tablespoons Cornstarch
  • 3 tablespoons Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 teaspoon Red chili flakes
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 4 tablespoons Creamy peanut butter
  • 200 milliliters Coconut milk
  • 1 tablespoon Brown sugar
  • 2 stalks Scallions, thinly sliced (optional for garnish)
  • 2 tablespoons Chopped peanuts (optional for garnish)
  • 4 servings Cooked rice

Directions

Step 1

Slice the pork tenderloin into thin pieces, approximately 1/4-inch thick.

Step 2

Season the pork slices with salt and black pepper, then coat them evenly with cornstarch. Set aside.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the pork slices and cook for 2-3 minutes on each side until golden brown and fully cooked through. Remove the pork from the skillet and set aside.
