  • 2 pounds Boneless pork shoulder
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 4 cups Chicken broth
  • 1.5 cups Roasted green chiles, diced
  • 3 medium Russet potatoes, peeled and diced
  • 1 teaspoons Ground cumin
  • 1 teaspoons Dried oregano
  • 0.5 teaspoons Ground coriander
  • 0.25 cups Fresh cilantro, chopped (optional)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Trim excess fat from the pork shoulder and cut it into 1-inch cubes. Season the pork with salt and black pepper.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Add the pork cubes in batches, searing them until browned on all sides. Remove the pork from the pot and set aside.
