Ingredients

  • 2 pounds pork shoulder
  • 2 medium onion
  • 2 medium red bell pepper
  • 4 cloves garlic cloves
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 14 ounces diced tomatoes (canned)
  • 2 cups beef or chicken broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 0.5 cups sour cream (for serving)
  • 2 tablespoons fresh parsley (optional, for garnish)
  • 4 cups egg noodles or rice (for serving)

Directions

Step 1

Cut the pork shoulder into 1.5-inch chunks and pat them dry with paper towels. Season with 1 teaspoon of salt and the black pepper.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Sear the pork in batches until lightly browned on all sides. Transfer the browned pork to the slow cooker.

Step 3

Peel and dice the onions. Core, deseed, and slice the red bell peppers into strips. Mince the garlic cloves.

Step 4

In the same skillet, reduce the heat to medium and add the onions, cooking until softened (about 5 minutes). Stir in the garlic, red bell peppers, sweet paprika, and caraway seeds, cooking for another 1-2 minutes until fragrant.

Step 5

Add the tomato paste and stir well to coat the vegetables. Sprinkle the flour over the mixture, stirring to combine.

Step 6

Pour in the diced tomatoes and broth, scraping up any browned bits at the bottom of the skillet. Simmer the mixture for 2-3 minutes before transferring it to the slow cooker.

Step 7

Stir the pork and vegetable mixture together in the slow cooker. Cover and cook on low for 6-7 hours, or until the pork is tender and the flavors are well combined.

Step 8

Adjust seasoning with remaining salt if needed. Serve the goulash over egg noodles or rice, topped with a dollop of sour cream and a sprinkle of fresh parsley, if desired.
