Ingredients

  • 4 cups Cooked white rice (preferably day-old)
  • 1 cup Boneless pork loin, diced
  • 3 large Eggs
  • 1 cup Carrots, diced
  • 0.5 cup Frozen peas
  • 4 stalks Green onions, sliced
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 3 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 2

Add the diced pork loin and cook until browned and fully cooked, about 5–6 minutes. Remove from the pan and set aside.

Step 3

In the same wok or skillet, add 1 more tablespoon of vegetable oil. Crack the eggs directly into the pan and scramble them, breaking them into small pieces as they cook. Remove and set aside.

Step 4

Add the remaining tablespoon of vegetable oil to the pan and increase the heat to high. Add the diced carrots and cook for 2 minutes, stirring frequently.

Step 5

Add the minced garlic and frozen peas, and cook for an additional minute.

Reduce the heat to medium and add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice for 3–4 minutes to heat it through.
