Ingredients

  • 4 pieces (150g each) pork fillets
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1.5 cups (pitted, fresh or frozen) dark sweet cherries
  • 0.5 cup red wine
  • 2 tablespoons balsamic vinegar
  • 0.5 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon (optional) fresh thyme leaves

Directions

Step 1

Season the pork fillets with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil and butter over medium-high heat. When hot, sear the pork fillets for about 3-4 minutes per side until nicely browned. Remove them from the skillet and set aside.
