Ingredients

  • 2 pounds Pork shoulder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 15 ounces Canned diced tomatoes
  • 4 ounces Canned green chilies
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 8 large Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Chopped fresh cilantro
  • 0 Sour cream (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the pork shoulder with salt and black pepper on all sides.

Step 3

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the pork for 2-3 minutes on each side until browned. Remove and set aside.

Step 4

In the same pan, add diced onion and sauté for 5 minutes, or until softened.

Add minced garlic and cook for another 1 minute until fragrant.

Stir in chicken broth, canned diced tomatoes, green chilies, chili powder, cumin, and paprika. Mix well.

Pour any remaining sauce over the enchiladas, covering them evenly.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
