Ingredients

  • 1 kg Ground pork
  • 1 cup Carrots (grated)
  • 1 piece Bell pepper (chopped into small cubes)
  • 0.5 cup Sweet pickles (chopped)
  • 1 piece Onion (finely chopped)
  • 0.5 cup Raisins
  • 1 cup Grated cheese
  • 1 cup Breadcrumbs
  • 2 pieces Eggs (beaten)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 pieces Vienna sausage or hotdogs
  • 2 pieces Hard-boiled eggs (sliced into halves)
  • 4 sheets Aluminum foil (for wrapping)

Directions

Step 1

In a large mixing bowl, combine the ground pork, grated carrots, bell pepper, sweet pickles, onion, raisins, grated cheese, and breadcrumbs.

Step 2

Add the beaten eggs, salt, and ground black pepper to the mixture. Mix thoroughly using clean hands or a spatula until well-combined.

Step 3

Lay a sheet of aluminum foil on a flat surface. Scoop 1 to 2 cups of the pork mixture onto the center of the foil and flatten it into a rectangular shape, about 1/2 inch thick.

Step 4

Place a few Vienna sausage or hotdogs and halves of hard-boiled eggs lengthwise along the center of the flattened pork mixture.

Step 5

Carefully roll the pork mixture into a log shape, making sure the filling stays in the center. Tightly wrap the log in aluminum foil, twisting the ends to seal. Repeat this process for the remaining pork mixture and fillings.

Step 6

Prepare a steamer and bring water to a boil. Place the wrapped embutido logs in the steamer and steam for 1 hour.

Step 7

After steaming, let the embutido cool completely before unwrapping the foil. For added flavor, you can also lightly fry the embutido before serving.

Slice into medallions and serve with ketchup, sweet chili sauce, or your preferred dipping sauce. Enjoy!
