  • 2 tbsp fresh parsley (chopped)
  • 1 cup white mushrooms (sliced)
  • 1 cup fresh green beans (trimmed)

Directions

Step 1

Cut the pork loin into 1/2-inch thick medallions. Lightly season both sides with the kosher salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork medallions in a single layer and sear for 3-4 minutes per side until golden and cooked through. Remove from the skillet and set aside.
