Prepare the pork loin chops by trimming any excess fat and slightly pounding them with a meat mallet to an even thickness (about 1/2 inch).
Season both sides of each pork chop with salt and black pepper.
Set up a breading station with three shallow bowls. Place all-purpose flour in the first bowl. Beat the eggs in the second bowl. Add the panko breadcrumbs in the third bowl.
Dredge each pork chop in the flour, shaking off the excess. Then, dip it into the beaten eggs, allowing any excess egg to drip off. Finally, coat the pork chop in the panko breadcrumbs, pressing gently to adhere the breadcrumbs evenly.
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by inserting a thermometer or by dropping a small piece of breadcrumb into the oil; it should sizzle immediately.
Carefully slide one or two breaded pork chops into the hot oil (do not overcrowd the pan). Fry each cutlet for about 3-4 minutes per side, or until golden brown and cooked through. The internal temperature of the pork should reach 145°F (63°C).
Transfer the cooked pork cutlets to a plate lined with paper towels to drain excess oil. Repeat with the remaining cutlets.
Slice the cutlets into strips before serving for easier eating, if desired.
Serve the tonkatsu over shredded cabbage alongside steamed white rice. Drizzle with tonkatsu sauce or serve the sauce on the side for dipping.
