Slice the pork tenderloin into thin strips and place in a bowl.
Mix 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 0.5 teaspoon white pepper in a small bowl. Pour over the pork, mix thoroughly, and set aside to marinate for 10 minutes.
Wash the choy sum and chop into 2-inch lengths. Mince the garlic and ginger. Thinly slice the scallions and set aside.
Bring a pot of water to a boil. Cook the egg noodles according to the package instructions. Drain, rinse under cold water, and toss with 1 teaspoon of sesame oil to prevent sticking.
In a small bowl, mix the remaining 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 2 tablespoons water, and 1 teaspoon brown sugar. Set aside.
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the pork and stir-fry for 2-3 minutes until browned and just cooked through. Remove the pork and set aside.
Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and ginger, stir-frying for 30 seconds until fragrant.
Add the choy sum to the wok and stir-fry for 2-3 minutes until wilted and tender-crisp.
Return the pork to the wok, then add the cooked noodles. Pour the sauce mixture over the top, tossing everything together to coat evenly. Stir-fry for an additional 2 minutes to heat through.
Taste and adjust seasoning with salt if needed. Sprinkle sliced scallions over the dish as a garnish.
