Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 14-ounce can diced tomatoes (with juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Season the pork chops with salt, black pepper, and paprika on both sides.

Step 2

Heat olive oil in a large skillet or deep pan over medium-high heat.

Step 3

Sear the pork chops for 3-4 minutes on each side until golden brown. Remove them from the pan and set aside.

Step 4

In the same skillet, add the diced onion and sauté for 2-3 minutes until soft and translucent.

Step 5

Add the minced garlic to the skillet and cook for 30 seconds or until fragrant.

Step 6

Stir in the rice and toast for 1-2 minutes, stirring occasionally to coat the grains in the oil.

Step 7

Pour in the chicken broth and diced tomatoes with their juice. Stir well to combine.

Step 8

Add the thyme and oregano to the pan, then return the seared pork chops to the skillet, nestling them into the rice mixture.

Step 9

Bring the mixture to a simmer. Cover the skillet with a lid, reduce the heat to low, and cook for 20-25 minutes or until the rice is tender and the liquid is absorbed, turning the pork chops halfway through cooking.

Step 10

Once cooked, remove the skillet from heat and let it rest for 5 minutes with the lid on.

Step 11

Sprinkle chopped parsley over the top for garnish before serving. Enjoy!
